 Olive oil1⁄4 Cup (4 tbs)

 Canned butter beans16 Ounce
 Allspice berries1 Tablespoon
For marination
 Oxtail5 Pound, cleaned (fat trimmed)
 Oxtail seasoning1⁄4 Cup (4 tbs)
 Soy sauce1⁄4 Cup (4 tbs)
For seasoning paste
 Scallion2 Bunch (200 gm)
 Garlic4 Clove (20 gm)
 2 inch ginger1
 Scotch bonnet pepper1
 Fresh thyme2 Tablespoon
 Onions2 Large
For dumpling
 All purpose flour2 1⁄2 Cup (40 tbs)
 Salt1 Teaspoon
 Brown sugar/Sugar2 Teaspoon
 Water1⁄2 Cup (8 tbs)


1. In a large bowl, Season generously with Keith’s Beef & Oxtail Seasoning, and add in soy sauce, massage meat with hands. Allow to marinate overnight or for 1 hour.
2. For making seasoning paste – in a food processor take scallions, garlic and ginger, scotch bonnet pepper and onion. Make a fine paste.
3. Prepare seasoning paste by adding mentioned items in food processor.
4. Create dumplings by whisking together flour, salt and sugar. Gradually add water and knead until soft dough has formed. Form dumplings and set aside in a floured cookie sheet.

5. In a large pot with tight fitting lid, pour in olive oil and brown oxtail over medium heat for 7 minutes.
6. Add 85% of the seasoning paste, all spice berries, ketchup, and cover. Simmer for 120 minutes.
7. When oxtail is tender add in dumplings. Swirl the pot, pour in water and simmer for 10 minutes.
8. Add in butter beans and swirl.

9. Serve with oxtail Caribbean Style Rice and Peas.
