MAKING
1 Over a pan of boiling water, whisk 4 egg yolks in a bowl.
2 Add in the Grand Marnier, sugar and a touch of water so that the eggs do not curdle.
3 Continue whisking over boiling water.
4 Using an electric beater, beat all 6 egg whites until it forms soft peaks.
5 Add the chocolate and butter to the hot yolk mixture.
6 Mix well using a spatula.
7 Gently fold in the egg white into the chocolate mixture.
8 Cover the bowl and place in the refrigerator for at least 4 hours.
SERVING
9 Serve chilled.
