Directions

Medium heat the frying pan. Add oil to the pan. Add garlic. Cook for a few seconds. Add chicken. Cook for a minute or two. Drain off fat if you wish. Add kaffir lime leaves, galangal, and lemongrass to the chicken. Cook for a minute. Add chicken stock. Add fish sauce. Add oyster sauce. Add sugar to the pan. Add tomatoes. Stir well. Lower the heat.
