Ingredients

 
2 tablespoons olive oil
 
2 large onions, diced (you can use one red and one yellow)
 
2 bell peppers (green, red, or yellow), diced
 
3 or 4 garlic cloves, chopped
 
1 tablespoon chili powder
 
1 teaspoon dried oregano
 
3/4 teaspoon salt
 
1/2 teaspoon black pepper
 
1 can (28 ounces) crushed tomatoes
 
3/4 to 1 cup liquid (I use beer; but water or broth is fine)
 
3 cans (15 ounces each) drained and rinsed beans (such as navy, pinto and black)

Directions

Heat the olive oil in a large heavy pot (about 5 quarts) over medium heat. Add the onions, peppers, and garlic and stir well with a wooden spoon to coat the vegetables with oil. Cover the pot and cook 10 minutes, until vegetables are softened.
Add the chili powder and stir in. Crumble the oregano with your fingertips and add to the pot along with the salt and pepper. Stir and cook about 30 seconds.
Add the tomatoes and 3/4 cup beer. Stir to combine. If mixture seems too thick, add 1/2 cup more beer or other liquid. Stir in the drained beans, cover the pot, and cook slowly 15 to 20 minutes to allow flavors to blend. Taste and add more salt and pepper if needed.
Serve with cornbread or crackers.
