1. In a bowl, sift flour, wheat flour, light brown sugar, baking powder and kosher salt.
2. In another bowl, combine pureed beets, milk, yogurt, egg, melted butter and vanilla extract. Whisk it well to combine. Add the dry mixture to the wet mixture and whisk to form a batter.
3. In a pan, over medium heat, pour the batter in small portions and cook till golden.
4. Serve with honey or maple syrup.
