Ingredients
2 small 6-8 oz beef tenderloin steaks
1 tbsp + 2 tbsp olive oil
1 tsp sea salt
1 tsp pepper
1 small shallot, diced
SAUCE INGREDIENTS
1/2 Cup water
1 tsp tomato paste
1/4 cup marsala wine
1 tbsp balsamic vinegar
1 tbsp Worcestershire sauce
Directions
1. Oil the beef tenderloin with 1 tbsp olive oil and crack some pepper and sprinkle salt over it.
2. For the sauce, mix all the sauce ingredients in a cup.
3. Heat a heavy gauge saute pan on high. Add 2 tbsp extra virgin olive oil.
4. Add the beef tenderloin steaks to it.
5. cook for 3 minutes and flip. Remove them from the pan after 3-5 minutes. Do not over cook.
6. Add shallot to the pan, scrape the bottom of the pan.
7. Add the sauce mix and cook on high until the sauce is about half.
8. Finish with 1 tbsp butter.
9. Garnish the steaks with the sauce.
