Housewife's Stuffed Duck Recipe

 Pig's liver8 Ounce
 Milk1 Tablespoon
 Onions1 1⁄2 Ounce
 Bacon3 Ounce
 Lard5 Ounce
 Potatoes1 Pound
 Marjoram1 Teaspoon


For this dish use a young, meaty, not too fat duck.
Care should be taken when drawing the duck, not to cut too large an opening.
Cut the bacon and pig's liver into small cubes, boil in water and strain.
Cook the potatoes in their jackets, and then chop.
Soak the roll in milk and crumble well.
Fry 1 the well minced pig's liver in 3 oz. lard.
Season and put into a basin.
When it is cold, add 2 eggs, bacon, the duck's liver, potato and roll, salt and mix all together carefully.
Stuff the duck with this mixture, sew up the opening and salt.
Melt the rest of the lard in a pan, add the duck and, adding a little water, roast in the oven.
Baste from time to time and, later putting the apples round it, roast the duck until it is tender.
When serving cut the duck in two, if possible, keeping the stuffing in one piece.
Put the stuffing in the middle of the dish.
Put the sliced duck on it and round it the stewed apples.
Finally sprinkle the gravy, boiled with a little water, over the dish.
