All I can say about this Hot-water Pastry is YUM! Hot-water Pastry served as Dessert is the best food to pep me up. This recipe will save you dollars which you have spent at Canadian restaurants for similar or perhaps inferior taste. In my opinion, if one is a chef, one ought to have a personal recipe of Hot-water Pastry, just like I do.

Ingredients

 
2 1/4 cups sifted cake and pastry flour
 
1 teaspoon salt
 
1/2 teaspoon baking powder
 
2/3 cup shortening
 
1/3 cup boiling water
 
OR
 
2 cups unsifted all-purpose flour
 
1 teaspoon salt
 
1/2 teaspoon baking powder
 
3/4 cup shortening
 
1/3 cup boiling water

Directions

Sift flour, salt and baking powder together.
Melt shortening in boiling water over very low heat.
Cool, and beat in sifted dry ingredients.
Turn dough onto waxed paper, and form into ball.
Chill.
Roll out as directed for Plain Pastry.
Use in any recipe requiring plain pastry.
