Ingredients

 1 1/2 pounds loose spinach or 1 1/2 10 ounce packages cleaned spinach
 White vinegar4 Teaspoon
 Sugar2 Teaspoon
 Ground black pepper To Taste
 Corn oil2 Tablespoon
 Mushrooms4 Ounce, thinly sliced
 Low fat yogurt2 Tablespoon
 Onions1 Cup (16 tbs), diced
 Lemon juice4 Teaspoon, squeezed

Directions

Wash spinach and remove all tough stems.
Drain well.
In hot oil saute mushrooms and onions until onions wilt.
Add lemon juice, vinegar, sugar and pepper and mix.
Stir in spinach and cook, only until spinach begins to wilt.
Remove from heat; stir in yogurt and serve.
