Ingredients

 Vegetable oil2 Tablespoon
 4 teaspoons white-wine tarragon vinegar
 1 teaspoon Italian salad-dressing mix
 1 cup cooked, peeled shrimp
 Tomato2 Tablespoon, chopped
 Celery1 Tablespoon, chopped
 Green onion1 Tablespoon, chopped
 Capers1 Teaspoon, drained
 Shredded lettuce
 Shredded Cheddar cheese1/4 Cup (16 tbs)
 Parsley1 Tablespoon, chopped

Directions

1. In a screw-top jar, combine oil, wine vinegar and Italian dressing mix; cover and shake well.
2. In a 1 quart bowl, combine shrimp, tomato, celery, green onion and capers. Drizzle dressing over shrimp mixture; toss gently. Microwave at 30% ( medium low ) 3 to 4 minutes or until warm; toss after 1-1/2 minutes.
3. Place lettuce on salad plates. Spoon warm shrimp mixture over lettuce. Sprinkle with cheese and parsley.
