Hot Potato And Broccoli Vinaigrette Recipe

In fact, the cider vinegar and dry mustard magic has made this Hot Potato And Broccoli Vinaigrette so deliciously flavored that it is sure to win even the most discrete palate. Ingredients
1 pound tiny new potatoes
1 pound broccoli, trimmed of tough stems, heads cut into florets
1 clove garlic
2 scallions
4 tablespoons olive oil
4 tablespoons cider vinegar
1/2 teaspoon dry mustard
1/4 teaspoon paprika
Freshly ground black pepper to taste
Directions
Scrub potatoes and cook whole in their jackets in covered pot in water to cover until tender, about 20 minutes.
Cut in quarters.
Steam broccoli over hot water until just tender, about 7 minutes.
While potatoes and broccoli cook, press garlic, slice scallions finely; combine with remaining ingredients and whisk.
Place quartered potatoes (do not peel them) and broccoli in serving dish and pour over dressing.
Stir gently and serve warm.
