Directions

Pour boiling water over oysters; drain well.
Finely chop.
Add onion, parsley and bread crumbs; season to taste.
Blend with 1 beaten egg and butter; chill.
Shape into tiny balls; roll in remaining beaten egg and fine crumbs.
Fry in deep hot fat at 360 degrees until browned; drain on absorbent paper.
Serve hot on toothpicks.
