Ingredients
3 1/2 tablespoons mayonnaise
1 tablespoon prepared mustard
1 tablespoon lemon juice
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
1 egg yolk, well beaten
1 1/3 cups(6 1/2-oz. can) crab meat, drained and bony tissue removed
5 slices white bread, crusts removed
Softened butter or margarine
1/4 cup shredded Parmesan cheese
Directions
Combine mayonnaise, mustard, lemon juice, salt, and pepper; blend in the egg yolk.
Lightly mix in the crab meat.
Toast bread on one side; cut each slice into four strips; spread untoasted sides with butter.
Spread crab meat mixture on each bread finger; sprinkle about 1/2 teaspoon cheese over top of each; arrange on a baking sheet.
Broil about 3 inches from source of heat 4 to 5 minutes.
