Ingredients

 Celery1 1/2 Cup (16 tbs), diced
 Onion1/2 Cup (16 tbs), chopped
 Cooked chicken2 Cup (16 tbs), diced
 Ripe olives1/2 Cup (16 tbs), sliced
 Toasted slivered almonds1/4 Cup (16 tbs)
 Pimiento2 Tablespoon, chopped
 Mayonnaise1/3 Cup (16 tbs)
 Prepared mustard2 Teaspoon
 Sour cream1/4 Cup (16 tbs)
 Potato chips1 Cup (16 tbs), crushed
 Shredded Cheddar cheese1/2 Cup (16 tbs)
 Paprika

Directions

Place celery and onion in a 2 qt.glass casserole dish.
Cover and microwave 3 to 4 minutes or until tender.
Stir in chicken, olives, almonds and pimiento.
Combine mayonnaise and mustard.
Pour over chicken and toss to coat evenly.
Microwave 4 to 5 minutes [REHEATS, 8 to 10 minutes] Stir once during cooking.
Stir in sour cream.
Combine potato chips and cheese.
Spoon evenly over chicken.
Microwave 1 to 2 minutes [REHEATS, 3 to 4 minutes] or until cheese just begins to melt.
Sprinkle with paprika and let stand 5 minutes.
If desired, serve on lettuce garnished with tomato wedges and slices of hard cooked eggs.
