Hot Chicken Macaroni Buffet Salad Recipe

Ingredients
Butter or Margarine – 2 tablespoons
Flour – 2 tablespoons
Milk - 1 ½ cups
Pickle Relish – ½ cup
Mayonnaise – ¼ cup
Lemon Juice – 2 tablespoons
Salt – 1 teaspoon
Elbow Macaroni – 2 cups, cooked
Cooked Chicken – 2 cups, cut into 1 inch
Tart Apple – 1 large, chopped
Celery – 3 stalks, chopped
Pimentos – 2 chopped
Pecans – ½ cup, finely chopped
Directions
GETTING READY
1) Preheat the oven to 350F
MAKING
2) In a saucepan, dab in the butter and add the flour and milk
3) Stir the mixture continuously over a low flame to get a smooth and thick sauce
4) Add in the apple, celery, pimentos, cooked macaroni, mayonnaise, pickle relish, lemon juice, chicken and salt
5) Spoon the mixture into a 2 quart greased casserole
6) Sprinkle in the chopped pecans on top
7) Bake at 350F for 30 minutes

8) Serve the dish warm
