Directions

Rinse well the salted beans in a strainer under running cold water for a few seconds.
Drain all the liquid.
Place the beans on a wooden board and mash with a fork.
Add garlic and mix well.
Heat oil and fry the bean mixture for a few minutes.
Add sugar, water or light stock and bring to a boil.
Stir in the cornflour mixture.
Stir well for a few minutes.
Remove from heat and use immediately.
Note: Also known as Chilli Bean Sauce, it is a mixture of fermented soya beans and ground hot chillies.
