Hot Water Fruit Cake Recipe
Ingredients
| Seedless raisins | 1/2 Cup (16 tbs) | |
| Honey | 1 Cup (16 tbs) | |
| Safflower oil | 1/3 Cup (16 tbs) | |
| Baking soda | 1 Teaspoon | |
| 1 cup boiling water or coffee | ||
| Mixed dried fruit | 3/4 Cup (16 tbs) | |
| Nuts | 1/2 Cup (16 tbs), chopped | |
| Whole wheat pastry flour | 1 1/4 Cup (16 tbs) | |
| 1 cup plus | ||
| Unbleached flour | 2 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| Cinnamon | 1/2 Teaspoon | |
| Cloves | 1/4 Teaspoon | |
| Nutmeg | 1/4 Teaspoon | |
Directions
Combine raisins, honey, oil, and baking soda in large bowl.
Pour water or coffee over mixture.
Mix well and cool to room temperature.
Prepare and set aside the dried fruit and nuts.
Sift together dry ingredients and stir into cooled raisin mixture.
Blend in dried fruit and nuts.
Grease sides of a 9 x 5-inch loaf pan and line bottom with greased paper.
Pour in batter.
Bake at 350° 1 hour, or until a toothpick inserted in the center of the cake comes out clean.
About 10 minutes before cake is done, brush top with honey.
Remove from pan to a wire rack to cool.
