Hot Sweet Sour Bean Sprout Salad Recipe
Ingredients
| Bean sprouts | 1 pound | |
| 6 slices bacon, cut crosswise in julienne strips | ||
| 1 small yellow onion, peeled and coarsely chopped | ||
| 1/2 small sweet green pepper, cored, seeded, and coarsely chopped | ||
| Ketchup | 1 Tablespoon (Dressing:) | |
| 1/4 cup tarragon vinegar | ||
| Salt | 1/4 Teaspoon (Dressing:) | |
| Pepper | 1 Pinch (Dressing:) | |
Directions
Wash sprouts several times in cool water, discard any that are dark or blemished, and drain the rest in a colander.
Brown bacon in a small skillet and drain on paper toweling.
Stir-fry onion and green pepper in drippings over moderate heat 8-10 minutes until onion is golden.
Mix in remaining dressing ingredients and simmer, uncovered, 5 minutes.
Just before serving, set colander of sprouts in sink and turn on hot water full blast.
Move colander about so all sprouts are heated—this will take 3-4 minutes.
Quickly drain sprouts and place in a salad bowl.
Pour in hot dressing, add bacon, toss to mix, and serve.
