Hot Sweet Sour Bean Sprout Salad Recipe
|Fresh bean sprouts||1 Pound (Readily Available In Oriental Groceries And Occasionally In Supermarkets)|
|Bacon slices||6 , cut crosswise in julienne strips|
|Yellow onion||1 Small, peeled and coarsely chopped|
|Sweet green pepper||1⁄2 Small, cored, seeded, and coarsely chopped|
|Tarragon vinegar||1⁄4 Cup (4 tbs)|

Brown bacon in a small skillet and drain on paper toweling.
Stir-fry onion and green pepper in drippings over moderate heat 8-10 minutes until onion is golden.
Mix in remaining dressing ingredients and simmer, uncovered, 5 minutes.
Just before serving, set colander of sprouts in sink and turn on hot water full blast.
Move colander about so all sprouts are heated—this will take 3-4 minutes.
Quickly drain sprouts and place in a salad bowl.
Pour in hot dressing, add bacon, toss to mix, and serve.
