 Frozen chopped spinach package1 , squeezed
 Seasoned bread crumbs1 Cup (16 tbs)
 Onions1/4 Cup (16 tbs), grated
 1/4 cup fat-free egg substitute
 Parmesan cheese1/4 Cup (16 tbs), grated
 1 tablespoon reduced-calorie margarine, melted
 Ground nutmeg1/8 Teaspoon
 Hot Chinese, spicy Dijon or honey mustard

Directions

In a medium bowl, combine the spinach, bread crumbs, onions, egg substitute, cheese, margarine and nutmeg.Mix until well combined.
Form into 20 balls.
Spray a cookie sheet with no-stick spray.
Place the balls on the cookie sheet and bake at 350° for 10 to 15 minutes or until lightly brown.
