 Chinese Cabbage2 Pound
 Salt2 Tablespoon
 Garlic1/2 Teaspoon, minced
 6 dried hot red peppers, broken in 1/2-inch squares
 White rice vinegar1/3 Cup (16 tbs)
 Sugar1/2 Cup (16 tbs)

Directions

Cut cabbage into 3" x 1/2" pieces.
Mix cabbage pieces and salt in a large bowl.
Let stand 4 hours.
Drain cabbage and squeeze to remove water; discard water.
Return cabbage to bowl.
Add garlic and red peppers.
Bring vinegar to a boil in a small saucepan.
Pour over cabbage mixture.
Add sugar; mix well.
Cover and let stand 4 hours.
