Hot & Sour Chinese Cabbage Recipe

Ingredients
| Chinese Cabbage | 2 Pound | |
| Salt | 2 Tablespoon | |
| Garlic | 1/2 Teaspoon, minced | |
| 6 dried hot red peppers, broken in 1/2-inch squares | ||
| White rice vinegar | 1/3 Cup (16 tbs) | |
| Sugar | 1/2 Cup (16 tbs) | |
Directions
Cut cabbage into 3" x 1/2" pieces.
Mix cabbage pieces and salt in a large bowl.
Let stand 4 hours.
Drain cabbage and squeeze to remove water; discard water.
Return cabbage to bowl.
Add garlic and red peppers.
Bring vinegar to a boil in a small saucepan.
Pour over cabbage mixture.
Add sugar; mix well.
Cover and let stand 4 hours.
