Ingredients

 Cooked brown rice1 Cup (16 tbs)
 Butter3 Tablespoon
 Onion1 , chopped
 1/4, cup chopped snow peas
 Pepper red1/4 Cup (16 tbs), chopped
 Zucchini1 , sliced
 Spinach leaves2 , finely chopped
 Red pepper, cut in strips, to garnish
 Hard-boiled eggs2 , hardboiled (Dressing)
  black pepper1 (Dressing)
 Paprika1/4 Teaspoon (Dressing)
 1/2 cup sour crleam

Directions

Keep the cooked rice hot in a colander over hot water.
Melt the butter in a frying pan and add the onion, snow peas, pepper and zucchini.
Cook for 5 minutes and mix with the hot rice.
Add the spinach to the rice.
To make the dressing, place the chopped eggs in a saucepan with the pepper, paprika and sour cream.
Heat but do not boil.
Place the salad in a serving bowl and pour over the sour cream dressing.
Garnish with strips of red pepper.
