Hot Rice Salad Recipe
Ingredients
| Cooked brown rice | 1 Cup (16 tbs) | |
| Butter | 3 Tablespoon | |
| Onion | 1 , chopped | |
| 1/4, cup chopped snow peas | ||
| Pepper red | 1/4 Cup (16 tbs), chopped | |
| Zucchini | 1 , sliced | |
| Spinach leaves | 2 , finely chopped | |
| Red pepper, cut in strips, to garnish | ||
| Hard-boiled eggs | 2 , hardboiled (Dressing) | |
| black pepper | 1 (Dressing) | |
| Paprika | 1/4 Teaspoon (Dressing) | |
| 1/2 cup sour crleam | ||
Directions
Keep the cooked rice hot in a colander over hot water.
Melt the butter in a frying pan and add the onion, snow peas, pepper and zucchini.
Cook for 5 minutes and mix with the hot rice.
Add the spinach to the rice.
To make the dressing, place the chopped eggs in a saucepan with the pepper, paprika and sour cream.
Heat but do not boil.
Place the salad in a serving bowl and pour over the sour cream dressing.
Garnish with strips of red pepper.
