Ingredients

 Potatoes1 1/2 Pound
 1 tablespoon finely chopped onion or shallot
 Celery2 Tablespoon, finley chopped
 2 tablespoons finely chopped parsley or sweet pepper, optional
 Mustard1 Tablespoon, made
 3 tablespoons salad cream
 Tomatoes1 Can (10oz) (Filling)
 Eggs4 , boiled (Filling)
 Cheese1 Tablespoon, grated (Filling)

Directions

Cook the potatoes in their skins.
Peel and dice while hot.
Add the onion or shallot, celery, parsley or sweet pepper; blend with the mustard and salad cream.
Pile in a ring on a hot dish.
Heat the tomatoes from the can and add to this the sliced eggs and turn into the centre of the ring.
Top with grated cheese.
