Hot Potato Salad Recipe
Ingredients
3 lbs. potatoes
1/2 lb. bacon in 1/2 inch pieces
1/2 cup chopped onions
1/4 cup vinegar
1/4 cup water
1/2 tsp. salt
Freshly-ground pepper
1 tsp. dry mustard
1 cup sprouted lentils
2 tbsp. chopped chives
Directions
Boil potatoes.
Drain, peel and cut into 1/2-inch thick slices.
Place in salad bowl.
Fry bacon.
Remove to drain.
Saute onions in bacon fat until soft.
Add vinegar, water, salt, pepper and mustard to pan and bring to a boil.
Add lentil sprouts to potato slices in bowl.
Pour hot dressing over all and mix gently.
Sprinkle with bacon bits and chives and serve immediately.
This is a good summer meal with the addition of a cold soup, egg-stuffed tomatoes, marinated cucumbers and a sponge cake.
