Ingredients
| Lemon – ½, juice extracted | ||
| Garlic – 2 cloves, crushed | ||
| Olive oil | 3 Tablespoon | |
| Basil leaves | 1/2 Cup (16 tbs), chopped | |
| Parmesan cheese | 4 Tablespoon | |
| Broccoli- 1 small head, flowers only, sauteed | ||
| Zucchini | 1 , sliced | |
| Mushrooms - 1 cup, thickly sliced, sauteed | ||
| Onion | 1 , sliced | |
| Tomatoes | 1 Cup (16 tbs), chopped | |
| Corkscrew pasta curls - 2 cups, uncooked | ||
Directions
GETTING READY
1. In a large mixing bowl, mix together all ingredients except pasta.
MAKING
2. In a large saucepan, cook corkscrew pasta curls following instructions given in the package.
3. Drain well.
FINALISING
4. While the pasta is still hot, add it to the mixture and toss to mix.
SERVING
5. In a serving plate, place the salad and top with quartered black olives and pimento strips or sweet red pepper.
6. Serve immediately.
