| Virgin olive oil | 1 Tablespoon | |
| Dried oregano | 1 Tablespoon, chopped | |
| Black olives | 1/4 Cup (16 tbs) | |
| 1 cup cooked green beans | ||
| Cherry tomatoes | 1 Cup (16 tbs), quartered | |
| Lemon peel | 2 Teaspoon, grated | |
| White wine vinegar | 2 Tablespoon | |
| Lemon juice | 1 | |
| Lettuce | 6 Cup (16 tbs), finely shredded | |
| Additional lemon juice | ||
| Fresh chopped parsley to garnish | ||

Directions
Poach chicken breasts in defatted chicken stock or season breasts lightly with salt, freshly ground pepper and a pinch of ground cloves.
Saute in olive oil until cooked through.
Cool, discard skin and pull
