Ingredients

 250 gl8 oz green lentils, soaked
 Light vegetable or chicken stock or water (to cover)
 125 g/4 oz smoked German sausage
 125 g/4 oz pickled cucumber or gherkin
 30 g/1 oz chopped onion
 Garlic1 Clove (5gm), crushed
 8 tbls safflower or sunflower oil
 Cider vinegar4 Tablespoon
 2 tbls wholegrain mustard
 Caraway seeds1 Teaspoon
 Salt To Taste
 Pepper To Taste

Directions

Cook the lentils in the stock or water until tender, drain and keep warm.
Thinly slice the sausage and the cucumber and combine gently with the lentils.
Heat together the onion, garlic, oil and vinegar for 5 minutes without boiling, then strain on to the lentils.
Spoon on the mustard and the caraway seeds and mix it all evenly.
Season to taste and serve warm or leave to cool.
