Hot Green Lentil Salad Recipe
Ingredients
| 250 gl8 oz green lentils, soaked | ||
| Light vegetable or chicken stock or water (to cover) | ||
| 125 g/4 oz smoked German sausage | ||
| 125 g/4 oz pickled cucumber or gherkin | ||
| 30 g/1 oz chopped onion | ||
| Garlic | 1 Clove (5gm), crushed | |
| 8 tbls safflower or sunflower oil | ||
| Cider vinegar | 4 Tablespoon | |
| 2 tbls wholegrain mustard | ||
| Caraway seeds | 1 Teaspoon | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Cook the lentils in the stock or water until tender, drain and keep warm.
Thinly slice the sausage and the cucumber and combine gently with the lentils.
Heat together the onion, garlic, oil and vinegar for 5 minutes without boiling, then strain on to the lentils.
Spoon on the mustard and the caraway seeds and mix it all evenly.
Season to taste and serve warm or leave to cool.
