Hot Curry Sauce Recipe
Ingredients
| 6 zucchini, peeled and chopped | ||
| 2 teaspoons polyunsaturated oil | ||
| Onion | 1 , chopped | |
| Curry powder | 1 Teaspoon | |
| Chilli sauce | 1/2 Teaspoon | |
| 1 tablespoon chutney or relish | ||
Directions
1.Boil, steam or microwave zucchini.
Drain and set aside to cool.
2.Heat oil in a non-stick trypan.
Add onion and curry powder and cook for 4-5 minutes or until onion softens.
3.Place zucchini, onion mixture, chilli sauce and chutney in a food processor or blender and process until smooth.
Pour into a saucepan and cook over low heat until sauce heats through.
