1/4 cup (1/2 stick) butter or margarine
 
1 small onion, finely chopped
 
1/2 small red or green pepper, finely chopped
 
1 can (8 1/2 ounces) minced clams, drained
 
1 pound pasteurized process American cheese, diced
 
1/2 cup ketchup
 
1 teaspoon lemon juice
 
1 tablespoon dry sherry
 
1/4 teaspoon ground red pepper
 
Crackers or Melba toast rounds

Directions

1. Put butter, onion and pepper into a 1 1/2-quart glass casserole. Cook uncovered in microwave oven 3 to 4 minutes at High.
2. Add drained minced clams and remaining ingredients except crackers; mix well. Cook uncovered in microwave oven 4 to 5 minutes at High, or until cheese melts; stir twice.
