Hot Chicken Salad Recipe

Ingredients

 
4 whole chicken breasts, halved
 
1 cup homemade chicken broth
 
1 small whole onion, peeled
 
1/2 bay leaf
 
1/4 cup chopped celery leaves
 
Salt and freshly ground black pepper to taste
 
2 tablespoons grated onion
 
1/2 cup diced celery
 
2 tablespoons chopped parsley
 
3 hard-cooked eggs, sliced or chopped
 
2/3 cup homemade mayonnaise
 
1/2 cup wheat germ

Directions

1. Put the chicken breasts, broth, whole onion, bay leaf, celery leaves, salt, and pepper in a skillet. Bring to a boil, cover, and simmer until tender, about 15 minutes. Cool in the broth.
2. Preheat the oven to 350 degrees.
3. Remove the chicken meat from the bones and skin; dice the meat finely. Strain and reserve the broth. Mix the diced chicken with the grated onion, celery, parsley, eggs, and salt and pepper to taste.
4. Remove the surface fat from the reserved broth and use a tablespoon or two of the broth to thin down the mayonnaise.
5. Add the thinned mayonnaise to the chicken mixture and pour into an oiled casserole. Top with the wheat germ and bake for 30 minutes, or until bubbly hot and lightly browned.
