Hawaiian Hot Chicken Salad Recipe
This Hot Chicken Salad is a hit with my family ! Who will not like a platter of tasty chicken cubes seasoned with herbs and fruit. Try this Hot Chicken Salad and let me know if you like it !
Ingredients
1/2. cup chopped walnuts
3 cups cubed cooked chicken or turkey
1 cup sliced celery
1 can (20 ounces) pineapple chunks in heavy syrup, drained
1/4 cup sliced green onion
1 cup (4 ounces) shredded sharp Cheddar cheese
3/4 cup mayonnaise
1 tablespoon lemon juice
1/4 teaspoon salt
1/4 teaspoon ground ginger
Directions
1. Spread walnuts in a 9-inch glass pie plate. Cook uncovered in microwave oven 2 1/2 to 3 minutes at High, or until toasted; stir twice.
2. Combine chicken, celery, pineapple, green onion, cheese and toasted walnuts in a 2-quart glass casserole.
3. Combine mayonnaise, lemon juice, salt and ginger. Add to chicken mixture; mix well. Cover with waxed paper.
4. Cook in microwave oven to serving temperature (6 to 7 minutes at High).
5. Let stand covered 2 minutes before serving.
