Hot Cheesy Potatoes with Broccoli Recipe
Ingredients
| 600 g/1 lb 5 oz new potatoes, thickly sliced | ||
| 200 g/8 oz Tenderstem broccoli | ||
| Olive oil | 4 Tablespoon | |
| Juice 1 lemon | ||
| 4 slices goat's cheese, from a log | ||
Directions
1. Steam the potatoes for 10-12 mins until just cooked. Add the broccoli, then cook for about 5 more mins until tender.
2. While the veg is cooking, mix the olive oil, lemon juice and some seasoning together in a large bowl. When the veg are ready, tip them into the dressing, toss together, then pile onto plates. Top each pile with a slice of goat's cheese and serve.
