Hot Apple Muffins Recipe
Ingredients
| 225 g/8 oz flour | ||
| Baking powder | 1 Teaspoon | |
| 75 g/3 oz lard | ||
| 50 g/2 oz dark brown sugar | ||
| 3 large cooking apples, peeled, cored and minced | ||
| 1 egg, beaten milk | ||
| Butter | ||
| Caster sugar | ||
Directions
Sift the flour and baking powder into a bowl.
Rub in the lard, then stir in the sugar.
Mix together the apples and egg and add to the flour mixture with a little milk if the mixture seems too dry.
Turn into a greased Swiss roll tin and bake in a preheated moderately hot oven (200°C/400° F, Gas Mark 6) for 35 minutes or until evenly browned.
Cut into 7.5 cm/3 inch rounds for traditionally shaped muffins or cut into squares.
Split open and spread with butter.
Dredge with caster sugar and serve hot.
