Ingredients

 Apricot1 Can (10oz)
 Corn starch1 Tablespoon
 Five spice powder1 Teaspoon
 Reduced-sodium soy sauce-2 teaspoons
 Red pepper1/2 Teaspoon, crushed
 Chili oil2 Teaspoon
 Chicken -1 pound boneless, skinless breast halves, cut into 2x1/4-inch slices
 Ginger root1 Tablespoon, finely chopped
 Asparagus spears1
 Green onions- 4, cut into 1-inch pieces
 Pineapple chunks1 Can (10oz)
 Brown rice-6 cups, hot cooked

Directions

GETTING READY
1) Chop the apricots to smaller pieces.
2) Now, mix the reserved juice, cornstarch, five-spice powder, soy sauce and red pepper together.

MAKING
3) Take a wok or 12-inch skillet and heat until hot. In the heated wok, add oil and rotate it to coat sides.
4) Then, add chicken and gingerroot. Stir-fry them for about 2 minutes or until chicken is cooked.
5) Add asparagus and onions and let it cook until asparagus is crisp-tender.
6) Now, stir in juice mixture, apricots and pineapple.
7) Heat the mixture until it boils. Keep stirring in between.
8) Boil and stir 1 minute.

SERVING
9) Serve over rice.
