Ingredients
3 pound leg of lamb
1/3 cup chili sauce
3/4 cup red wine
1 1/2 tablespoons vinegar
1/3 cup beef broth
1 tablespoon oil
1 teaspoon salt
1/2 teaspoon pepper
1/2 tablespoon sugar
1 bay leaf, crushed
3/4 cup onions, minced
1 small garlic clove, minced
Directions
1) Mix all of the ingredients and pour over the leg of lamb. Let marinate in the refrigerator for at least 12 hours, turning a number of times.
2) Place the lamb on a rack in a roasting pan, add half of the marinade and cook in a 325 degree oven for 2 1/2 to 3 hours or until the lamb is tender. Baste often with the remaining marinade.
