Hot And Sour Vegetable Soup Recipe
Ingredients
1/4 cup vegetable oil
4 to 6 scallions, including green parts, finely chopped
1 celery stalk with leaves, chopped
1/2 pound mushrooms, sliced
1 tablespoon chopped fresh gingerroot
1 quart homemade vegetable or chicken broth
3 tablespoons tamari (soy sauce)
2 tablespoons vinegar
1/2 teaspoon hot red pepper flakes, or to taste
1 6-ounce can water chestnuts, drained and sliced
1 1/2 cups fresh snow peas, or 1 7-ounce package frozen snow peas
1 cup fresh bean sprouts
1 tablespoon chopped parsley
Directions
1. Heat the oil in a wok or kettle and stir-fry the scallions, celery, and mushrooms briefly. Sprinkle with the ginger.
2. Add the broth, tamari, vinegar, and red pepper flakes. Bring to a boil and simmer for 10 minutes.
3. Add the water chestnuts, snow peas, and sprouts and simmer for 3 minutes. Sprinkle with the parsley
