Hot And Sour Vegetable Soup Recipe
Ingredients
| Vegetable oil | 1/4 Cup (16 tbs) | |
| 4 to 6 scallions, including green parts, finely chopped | ||
| 1 celery stalk with leaves, chopped | ||
| Mushrooms | 1/2 pound, sliced | |
| Ginger root | 1 Tablespoon, chopped | |
| 1 quart homemade vegetable or chicken broth | ||
| Tamari soy sauce | 3 Tablespoon | |
| Vinegar | 2 Tablespoon | |
| 1/2 teaspoon hot red pepper flakes, or to taste | ||
| Water chestnuts | 1 6 Ounce, drained | |
| 1 1/2 cups fresh snow peas, or 1 7-ounce package frozen snow peas | ||
| Bean sprouts | 1 Cup (16 tbs) | |
| Parsley | 1 Tablespoon, chopped | |
Directions
1. Heat the oil in a wok or kettle and stir-fry the scallions, celery, and mushrooms briefly. Sprinkle with the ginger.
2. Add the broth, tamari, vinegar, and red pepper flakes. Bring to a boil and simmer for 10 minutes.
3. Add the water chestnuts, snow peas, and sprouts and simmer for 3 minutes. Sprinkle with the parsley
