 4 dried black winter mushrooms, soaked in hot water for 25 minutes
 100g Szechuan preserved vegetables, finely sliced
 100g Chinese pickled green vegetables, finely sliced
 Onions spring3 , finely chopped
 Root ginger slice3
 Water850 Milliliter
 1 1/2 teaspoons rice wine or dry sherry
 Light soy sauce1 Tablespoon
 2 cakes tofu, finely sliced
 1 tablespoon cornflour mixture
 Sesame oil1 Teaspoon

Directions

Drain mushrooms, discard stalks, squeeze out all the liquid, then slice very finely.
In a medium saucepan, bring all the ingredients except cornflour (cornstarch) mixture and sesame oil to the boil; cook for 3 minutes.
Stir in cornflour (cornstarch) mixture, simmer, still stirring, until thickened then add sesame oil.
