Hoska Recipe

Ingredients
Milk-1 cup
Shortening-1/2 cup
Sugar-¾ cup
Salt-1/2 teaspoon
Warm water-1/4cup
Yeast, active dry or compressed-2 packages or cakes
Eggs-3
Enriched flour-5 1/2 cups, sifted
Citron-1/4cup chopped
Raisins¬-1/4 cup
Almonds-1/4 cup, chopped
Whole blanched almonds-1/4cup
Butter or margarine – as needed, melted
Directions
MAKING
1)In a saucepan, scald milk and add shortening, sugar and salt.
2)Cool to lukewarm.
3)In a large mixing bowl, dissolve yeast and add the lukewarm milk mixture.
4)Beat 2 eggs and add to yeast mixture.
5)Then, add 3 cups of the flour and beat until smooth.
6)Add citron, raisins and chopped almonds and remaining flour.
7)Knead dough on a lightly floured board until smooth and elastic.
8)Take a greased bowl and put the dough, brush it with melted shortening.
9)Cover and leave it in a warm place to rise until doubled in bulk, about 1 hour and 15 minutes.
10)Punch down and turn it out on a lightly floured board. Divide dough in half.
11)Divide one half into 3 equal pieces and roll each piece into a strip of about 18 inches long.
12)Take greased baking sheet and put 3 strips on it.
13)Form a braid and brush it lightly with melted butter or margarine.
14)Divide 1/2 of remaining dough into 3 equal pieces.
15)Form into a second braid about 18 inches long and put it on top of first braid.
16)Brush it lightly with melted butter or margarine.
17)Form remaining dough into a third braid about 18 inches long and put it on top of second braid.
18)Leave it to rise in a warm place until doubled in bulk for about 1 hour.
19)In a bowl, mix remaining egg with 1 tablespoon water and brush on loaf.
20)Sprinkle whole blanched almonds and bake at 375 degrees for about 45 minutes.
SERVING
21)Serve the Hoska sprinkled with sugar or with jam.
