Advance preparation:
In saucepan combine 2 beaten egg yolks, 2 tablespoons freshly grated horseradish, 2 tablespoons vinegar, 1 tablespoon sugar, 1 tablespoon prepared mustard, 1 tablespoon water, and 1/2 teaspoon salt.
Mix well.
Cook and stir over low heat till thickened, about 2 minutes.
Remove from heat.
Stir till smooth.
Refrigerate till well chilled, 3 to 24 hours.

Before serving:
Whip 1/2 cup whipping cream; fold into chilled horseradish mixture.
Assemble sandwiches of buttered rye bread, lettuce, and sliced, chilled cooked roast beef.
Top with dollops of horseradish mixture.
Makes about 1 1/3 cups sauce.
