Horiatiki, is one of those salads which has seriously taught me how to make a salad and what a salad can do to somebody who would have it. It is simple, yet very interesting to see the blend of flavors, freshness and textures combining on the plate. Also, eating a blend of such tastes and textures is just heavenly. The salad is also a very good option for those wishing to lose weight, without giving up on the temptations of the tongue.

Ingredients

 Tomatoes - 3 or 4, seeded and diced
 Cucumber1 , peeled
 Red onion1
 Kalamata olives1/2 Cup (16 tbs)
 Feta cheese1/2 Cup (16 tbs), crumbled
 Olive oil1/2 Cup (16 tbs)
 Red wine vinegar1/4 Cup (16 tbs)
 Garlic2 Clove (5gm)
 Oregano1 Teaspoon
 Salt1 To taste
 Pepper1 To taste

Directions

MAKING
1. In a salad mixing bowl, add diced tomatoes, cubed cucumbers, sliced red onions, Olives, feta cheese and toss together.
2. In a small bowl, whisk together the olive oil, vinegar, garlic, oregano, salt and pepper.

FINALISING
3. Pour the dressing into the salad mixing bowl with the vegetables and toss together and set aside in the refrigerator for 30 minutes

SERVING
4. Serve cold in a nice salad dish.
