Hopping John Recipe
hopping john is a southern rice and black eyed peas recipe made with added meat. This hopping john is made with ham and bacon pieces with added vegetables. Flavored with onion and garlic, with a three herb medley of parsley, sage and thyme, the hopping john has bell peppers in it too. finished with the peas, the hopping john makes a hearty full meal.
Ingredients
1 tablespoon vegetable oil
3 slices bacon, chopped
1 cup 1/4 inch smoked ham cubes
1/2 cup finely chopped onion
1 tablespoon finely minced garlic
1/2 cup diced red bell pepper
1 tablespoon chopped fresh parsley
1 cup Natural Long Grain
White Rice
2 cups canned chicken broth
1 1/2 teaspoons dried thyme leaves
1/2 teaspoon rubbed sage
1/2 teaspoon salt
1/4 teaspoon ground red pepper
1/8 teaspoon ground black pepper
1 bay leaf
1 (15-ounce) can black eyed peas, drained
Directions
Heat oil in medium saucepan.
Add bacon; cook over medium heat until bacon is crisp.
Add ham, onion and garlic; saute until onion is softened and translucent.
Add bell pepper and parsley; saute 1 minute.
Add rice; stir to coat well.
Add broth, thyme, sage, salt, ground red pepper, black pepper and bay leaf.
Bring to a boil.
Reduce heat; cover and simmer 20 to 25 minutes or until liquid is absorbed.
Stir in black eyed peas.
Remove bay leaf.
Add bacon; cook over medium heat until bacon is crisp.
