Hoppin' John Recipe
Kids at home love this Hoppin' John - guess the name too play a part in making this their favorite. This Hoppin' John is pretty easy to prepare too - just give it a try this weekend.
Ingredients
2 cups raw cow peas (dried field peas, do not soak!)
1 Hambone (plenty of meat)
2 t. crushed red peppers
2 medium onions, chopped
2 cups raw rice
Directions
Boil peas, hambone, and crushed peppers in enough water to cover until tender, adding more water if needed.
Add to the rice, 2 cups cooked peas and 2 cups pea liquid with chopped onion.
Put in rice steamer or double-boiler and cook for 1 1/2 hours or until rice is thoroughly done and dry.
Serve remainder of peas in separate dish with a shaker of crushed red peppers.
This is better if made ahead of time and the rice is reheated.
Note: Always eaten on New Year's Day in South Carolina, "from the statliest houses to the humblest cabin." Traditionally, eating Hoppin' John on New Year's Day will bring good luck.
