Hoppin' John Recipe
Ingredients
| Vegetable oil | 2 Teaspoon | |
| Onion | 1/2 Cup (16 tbs), diced | |
| Bay leaf | 1 | |
| Garlic | 1/2 Teaspoon, minced | |
| Salt | 1/2 Teaspoon | |
| Marjoram leaves | 1/2 Teaspoon, crushed | |
| Pepper | 1/8 Teaspoon | |
| Hot Sauce | 4 Drop | |
| Ground red pepper-dash | ||
| Canned black-eyed peas-3 ounces drained | ||
| Enriched rice-1/2 cup cooked | ||
| Imitation bacon bits-1 tablespoon | ||
Directions
MAKING
1. In a 9-inch nonstick skillet, pour in the oil
2. Heat the oil and then add in the onions and seasonings
3. Cook till the onions are translucent and cooked through
4. Add the peas, rice and bacon bits to the mixture and cook till the mixture is completely cooked through
5. Remove the bay leaf before serving
SERVING
6. Serve hot immediately
