Hoppin John Recipe
Ingredients
| 1 can black eyed peas | ||
| 1/2 medium onion, chopped fine | ||
| Celery stalks | 3 | |
| 2 cloves garlic, chopped fine | ||
| Parsley | 1 Bunch (100gm), chopped | |
| Dijon Mustard | 1 Tablespoon | |
| Olive oil | 1/2 Cup (16 tbs) | |
| Red wine vinegar | 3 Tablespoon | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
GETTING READY
1) Drain the peas and rinse thoroughly in cold running water. Strain water.
MAKING
2) In a salad bowl, put in peas.
3) Add chopped celery to the peas, along with other ingredients.
4) Toss all together with your hands.
SERVING
5) To be more traditional, hide a silver dime or quarter inside the peas before serving.
