Microwaved Hoppin John Recipe
Ingredients
| Bacon Slices | 4 , diced | |
| Onion | 1 Medium, chopped | |
| Hot water | 2 1/2 Cup (16 tbs) | |
| 1 1/2 cups cooked black-eyed peas | ||
| Long grain rice | 1 Cup (16 tbs) | |
| Salt | 1 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| Hot pepper sauce | 1 Dash | |
Directions
Set Power Select at HIGH.
In 2 1/2-quart casserole dish, heat bacon and onion 4 to 5 minutes or until bacon is crisp, stirring once; stir in remaining ingredients.
Heat, covered, 5 to 6 minutes or until liquid boils at HIGH.
Set Power Select at MEDIUM-LOW.
Heat, covered, 11 to 13 minutes or until rice is tender, stirring once.
Let STAND, covered, 5 minutes before serving.
