Hoppiint John Recipe

1 medium onion, chopped
2 cups hot water
1 1/2 cups cooked black-eyed peas
1 cup long grain rice
1 teaspoon salt
1/4 teaspoon pepper
Dash hot pepper sauce, optional
Directions
Combine bacon and onion in 2 1/2-quart casserole.
Cook at HIGH 4 to 5 minutes, or until bacon is crisp; stir once.
Stir in remaining ingredients.
Cook, covered, with lid, at HIGH 5 minutes and at MEDIUM-LOW 12 to 14 minutes, or until rice is tender; stir once.
Let stand, covered, 5 minutes before serving.
Cook at HIGH 4 to 5 minutes, or until bacon is crisp; stir once.
