Hoppel Poppel Recipe
Ingredients
| Butter/Margarine | 1/2 Cup (16 tbs) | |
| Onion | 1 Large, sliced | |
| 8 medium potatoes, cooked, peeled, and sliced | ||
| Paprika | 1 Teaspoon | |
| Parsley | 2 Tablespoon, chopped | |
| Eggs | 8 | |
| Light cream | 1/2 Cup (16 tbs) | |
| Salt | 1 Teaspoon | |
| Pepper | 1/2 Teaspoon | |
Directions
Heat butter and saute onion in it until golden brown.
Add potatoes, paprika, and parsley.
Saute until potatoes are golden.
Beat eggs with cream, salt, and pepper.
Pour eggs over potatoes.
Cook, stirring, until eggs are set.
