Directions
Wash and clean lotus roots but do not peel, or it will discolour.
Cut off a piece, at one end to be used as lid.
Fill the lotus roots with cooked rice, seal each root with the cut off end as lid, secure it with a toothpick.
Place lotus roots in a large pan with water.
Bring to the boil, lower heat and simmer for 2 hours.
Remove and cool, before serving, peel the outer skin of lotus roots carefully and cut into thick slices, arrange in a serving dish.
Pour sugar syrup over and serve immediately.
