Honeyed Orange Peach Cobbler Recipe

Ingredients

 
2 1/4 pounds peaches, peeled, cored, and sliced
 
1 1/2 teaspoons grated orange peel
 
1 navel orange, peeled, pith removed, and sectioned
 
1/4 cup orange juice
 
2 tablespoons lemon juice
 
1/4 cup honey
 
1/4 cup firmly packed light brown sugar
 
1 1/2 tablespoons flour
 
1/2 teaspoon cinnamon
 
2 tablespoons unsalted butter, cut into bits
 
Melted unsalted butter for brushing the biscuits
 
For the biscuit dough:
 
1 1/2 cups all purpose flour
 
1 tablespoon sugar
 
2 teaspoons baking powder
 
1/2 teaspoon salt
 
6 tablespoons cold unsalted butter, cut into bits
 
3 to 4 tablespoons milk

Directions

In a large bowl combine the peaches with the remaining ingredients except the melted butter.
Cover the bowl and let the mixture stand for 15 minutes.
Make the biscuit dough: Sift together the flour, sugar, baking powder, and salt.
Cut in the butter until the mixture resembles coarse meal.
Toss with the milk and form into a ball.
Pat the dough on a floured surface into a 1/4 inch thick round.
Cut out the biscuits with a 2 inch round cutter dipped in flour. (There should be 16 in all.)
Spoon the peach mixture into a deep 9 inch piepan or baking pan and arrange the biscuits over it, overlapping them slightly.
Brush the biscuits with the melted butter and bake in a preheated 375° F oven for 50 to 60 minutes or until the biscuits are golden and the filling is bubbling.
