Honeyed Sweet Potato Biscuits Recipe

2 cups (480 ml) unbleached flour
 
1 tbs (15 ml) baking powder
 
1/2 tsp (3 ml) salt
 
1/4 cup (60 ml) shortening
 
1 tbs (15 ml) grated orange peel
 
1 tbs (15 ml) grated lemon peel
 
3/4 cup (180 ml) sweet potatoes, baked until tender, peeled and mashed
 
1/3 cup (80 ml) honey
 
1/2 cup (120 ml) approximately, skim milk

Directions

In large bowl, mix flour, baking powder and salt.
Cut in shortening until mixture resembles peas.
Add orange and lemon peels, sweet potatoes and honey and mix well.
Add enough milk to make a soft, but not sticky, dough.
Turn out onto floured board and knead 3-4 times.
Pat to 1-inch thickness and cut out 2 1/4-inch rounds.
Place on ungreased cookie sheet and bake at 400°F (205°C) for 15-18 minutes or until lightly browned.
