Honeyed Mixed Citrus Peel Recipe

 Grapefruit1 Cup (16 tbs), chopped
 Lemon peel1 Cup (16 tbs), chopped
 Orange peel3/4 Cup (16 tbs), chopped
 Chopped1/4 Cup (16 tbs)
 Honey3/4 Cup (16 tbs)
 Water3/4 Cup (16 tbs)

Directions

Place all the peel in a heavy saucepan and cover with 2 1/2 cups cold water.
Bring to a boil and simmer 10 minutes.
Drain and rinse with cold water.
Repeat process 5 times.
In a saucepan, combine honey and water.
Bring to a boil and cook about 3 minutes.
Add peel and boil until syrup is completely absorbed by the peel.
Store in jar in refrigerator.
